Stuffed Bell Peppers with Turkey & Quinoa

The Mediterranean Diet and Glycemic Balance

Ingredients:

  • 2 bell peppers, halved and seeds removed
  • ½ cup cooked quinoa
  • 4 oz lean ground turkey
  • ½ cup diced tomatoes (canned or fresh)
  • ¼ cup onion, chopped
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tbsp extra virgin olive oil
  • 2 tbsp feta cheese, crumbled
  • Salt & black pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat a pan over medium heat and cook ground turkey with onions, garlic powder, and oregano until browned.
  3. Stir in quinoa, diced tomatoes, olive oil, salt, and pepper. Cook for another 2 minutes.
  4. Stuff the bell pepper halves with the mixture and place in a baking dish.
  5. Bake for 20 minutes. Remove, top with feta cheese, and serve.
