Mediterranean Chickpea & Quinoa Bowl

Ingredients:

  • ½ cup cooked quinoa
  • ½ cup cooked chickpeas (or canned, rinsed and drained)
  • ¼ cup cucumber, diced
  • ¼ cup cherry tomatoes, halved
  • 2 tbsp red onion, finely chopped
  • 2 tbsp feta cheese, crumbled
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley, chopped
  • Salt & black pepper to taste

Instructions:

  1. In a large bowl, combine quinoa, chickpeas, cucumber, tomatoes, red onion, and feta cheese.
  2. Drizzle with olive oil and lemon juice, then sprinkle with oregano, parsley, salt, and pepper.
  3. Toss well and serve immediately or refrigerate for a refreshing cold lunch.
