Ingredients:
- ½ cup cooked quinoa
- ½ cup cooked chickpeas (or canned, rinsed and drained)
- ¼ cup cucumber, diced
- ¼ cup cherry tomatoes, halved
- 2 tbsp red onion, finely chopped
- 2 tbsp feta cheese, crumbled
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tbsp fresh parsley, chopped
- Salt & black pepper to taste
Instructions:
- In a large bowl, combine quinoa, chickpeas, cucumber, tomatoes, red onion, and feta cheese.
- Drizzle with olive oil and lemon juice, then sprinkle with oregano, parsley, salt, and pepper.
- Toss well and serve immediately or refrigerate for a refreshing cold lunch.
