Turmeric Cauliflower Gut Healing Salad

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper, to taste
  • 2 cups baby spinach leaves
  • 1/4 cup pomegranate seeds
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup or agave syrup
  • 1 clove garlic, minced
  • Water, as needed

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, ground turmeric, ground cumin, ground coriander, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower florets in a single layer on a baking sheet lined with parchment paper.
  4. Roast the cauliflower in the preheated oven for 20-25 minutes, or until golden brown and tender, stirring halfway through the cooking time.
  5. While the cauliflower is roasting, prepare the dressing. In a small bowl, whisk together tahini, lemon juice, maple syrup or agave syrup, minced garlic, and a pinch of salt. Thin the dressing with water, as needed, until desired consistency is reached.
  6. Once the cauliflower is roasted, remove it from the oven and let it cool slightly.
  7. In a large mixing bowl, combine the roasted cauliflower, baby spinach leaves, pomegranate seeds, sliced almonds, and chopped cilantro.
  8. Drizzle the tahini dressing over the salad ingredients.
  9. Gently toss the salad until everything is evenly coated with the dressing.
