Ingredients:

  • 1 cup sprouted lentils
  • 1 large cucumber, diced
  • 1 bell pepper (any color), diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. Rinse the sprouted lentils under cold water and drain well.
  2. In a large salad bowl, combine the sprouted lentils, diced cucumber, diced bell pepper, halved cherry tomatoes, chopped red onion, and chopped fresh parsley.
  3. In a small bowl, whisk together the lemon juice, extra virgin olive oil, ground cumin, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad ingredients in the large bowl.
  5. Gently toss the salad until all the ingredients are evenly coated with the dressing.
  6. Adjust seasoning to taste with more salt and pepper if needed.
  7. Allow the salad to marinate in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
