Ingredients:
- 1 salmon fillet (6 oz)
- 1 tbsp extra virgin olive oil
- ½ tsp cumin
- ½ tsp paprika
- ¼ tsp turmeric
- 1 cup Brussels sprouts, halved
- 1 tbsp chopped walnuts
- 1 tsp lemon juice
- Salt & black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Rub salmon fillet with olive oil, cumin, paprika, turmeric, salt, and pepper.
- Toss Brussels sprouts with a little olive oil and place them on a baking sheet with the salmon.
- Roast for 18-20 minutes, until salmon is flaky and Brussels sprouts are crispy.
- Sprinkle chopped walnuts and lemon juice over the Brussels sprouts before serving.
