Grilled Salmon & Avocado Salad

Ingredients:

  • 1 salmon fillet (4-6 oz)
  • 1 cup mixed greens (spinach, kale, arugula)
  • ½ avocado, sliced
  • ¼ cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp sea salt
  • ¼ tsp black pepper

Instructions:

  1. Grill the salmon fillet for about 3-4 minutes per side over medium heat.
  2. Toss greens, cherry tomatoes, and avocado in a bowl.
  3. Whisk olive oil, lemon juice, salt, and pepper.
  4. Place the salmon on the salad and drizzle with dressing.
