Ingredients:
- 1 cup cooked black beans
- 1 cup roasted zucchini, bell peppers, and onions
- ½ cup brown rice or cauliflower rice
- 1 tbsp extra virgin olive oil
- 1 tbsp lime juice
- ½ tsp chili powder
- ½ tsp cumin
- 2 tbsp sliced almonds
Instructions:
- Preheat oven to 400°F (200°C). Toss zucchini, bell peppers, and onions with olive oil, chili powder, cumin, salt, and black pepper. Roast for 20 minutes.
- In a bowl, mix black beans, roasted veggies, and brown rice (or cauliflower rice).
- Drizzle with lime juice, sprinkle with sliced almonds, and serve warm.
