A light and nutritious breakfast option packed with protein and veggies, perfect for staying full without excess calories.
Ingredients:
3-4 egg whites
1 handful of spinach
½ red bell pepper, diced
¼ onion, diced
1 teaspoon olive oil
Whole grain toast (optional)
Instructions:
Heat the olive oil in a nonstick skillet over medium heat. Add the diced onions and bell peppers and sauté until softened, about 3-4 minutes.
Add the spinach and cook until wilted, about 2 minutes.
Pour the egg whites into the skillet and scramble them with the vegetables. Cook until the egg whites are fully set but still tender, about 2-3 minutes.
Serve alongside a slice of whole grain toast for extra fiber and sustenance.
