Mediterranean Veggie Omelet with Feta & Spinach

Ingredients:

  • 2 eggs
  • ¼ cup feta cheese, crumbled
  • ½ cup baby spinach
  • ¼ cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • ¼ tsp black pepper
  • 1 tbsp chopped basil or parsley

Instructions:

  1. Heat olive oil in a nonstick skillet over medium heat.
  2. Sauté cherry tomatoes and spinach for 1-2 minutes until softened.
  3. In a bowl, whisk eggs, black pepper, and a splash of water for fluffiness.
  4. Pour eggs over the vegetables and cook until set.
  5. Sprinkle feta cheese over the omelet before folding in half.
  6. Garnish with fresh herbs and serve warm.
