Mediterranean Quinoa Bowl with Salmon & Tahini Dressing

Ingredients:

  • 1 salmon fillet (6 oz)
  • ½ cup quinoa, cooked
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, diced
  • 2 tbsp black olives, sliced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp tahini
  • 1 tsp lemon juice
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt & black pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Season salmon fillet with cumin, garlic powder, salt, and pepper. Bake for 15-18 minutes until cooked through.
  3. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, and olives.
  4. In a small bowl, mix tahini, lemon juice, and a little water until smooth.
  5. Place baked salmon over the quinoa bowl, drizzle with tahini dressing, and serve.
