Mediterranean Quinoa Bowl with Salmon & Tahini Dressing
Ingredients:
- 1 salmon fillet (6 oz)
- ½ cup quinoa, cooked
- ½ cup cherry tomatoes, halved
- ½ cucumber, diced
- 2 tbsp black olives, sliced
- 1 tbsp extra virgin olive oil
- 1 tbsp tahini
- 1 tsp lemon juice
- ½ tsp cumin
- ½ tsp garlic powder
- Salt & black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Season salmon fillet with cumin, garlic powder, salt, and pepper. Bake for 15-18 minutes until cooked through.
- In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, and olives.
- In a small bowl, mix tahini, lemon juice, and a little water until smooth.
- Place baked salmon over the quinoa bowl, drizzle with tahini dressing, and serve.
