Ingredients:
- 2 eggs
- ¼ cup feta cheese, crumbled
- ½ cup baby spinach
- ¼ cup cherry tomatoes, halved
- 1 tbsp olive oil
- ¼ tsp black pepper
- 1 tbsp chopped basil or parsley
Instructions:
- Heat olive oil in a nonstick skillet over medium heat.
- Sauté cherry tomatoes and spinach for 1-2 minutes until softened.
- In a bowl, whisk eggs, black pepper, and a splash of water for fluffiness.
- Pour eggs over the vegetables and cook until set.
- Sprinkle feta cheese over the omelet before folding in half.
- Garnish with fresh herbs and serve warm.
